I had planned to spend one week in Saint Lucia but became so involved with food that it was impossible to get away.

Every January the island celebrates the Nobel Laureate Festival which honours the island’s two Laureates Sir William Arthur Lewis (Economics) and Sir Derek Alton Walcott (Literature).

Sir Derek’s favourite place to celebrate his birthday is Ladera resort in Soufriere. Holly and Tom Scott threw a birthday celebration where guests told personal stories about him (Sir Derek passed away in 2017). It was his first birthday party without him. We laughed a lot.

He had an incredible personality.

Of course the food was to die for! Chef Nigel and his team had us eating for hours. I ate everything in sight. It was toe-curling good!

My plate and Barbara’s. We ate ALL! Creole fish, chicken, mac n cheese, rice, veg, sweet potato pie, kidney beans, salad…there was so much more!

I can’t tell you what was best…The company, starters, lunch or dessert – all authentic Caribbean cuisine. All I can tell you is my taste buds thanked me and I slept well that night.
